Haydn Shaak

Executive Chef
Haydn Shaak has led the culinary vision at Hotel Domestique | Restaurant 17 since 2018, blending classical techniques with locally sourced, seasonal ingredients to create dishes that embody his philosophy of rustic elegance. His menus celebrate the flavors of the Carolinas, artfully infused with Italian and Mediterranean influences to create refined yet approachable dining experiences.

Haydn began his culinary career at age sixteen as an apprentice at City Range Steakhouse Grill in Greenville, South Carolina. He later graduated from the Culinary Institute of the Carolinas at Greenville Technical College and has spent more than a decade honing his craft in fine dining and leadership roles across the region. In 2020, he was honored as the South Carolina Restaurant and Lodging Association’s Restaurant Chef of the Year, and it 2022, he was honored as a South Carolina Chef Ambassador, a recognition of his commitment to promoting the state’s culinary heritage.

Passionate about sustainability and local sourcing, Haydn works closely with regional farmers and artisans to bring the freshest ingredients to the table. His guiding principle is simple: “If you want to be the best, never stop that pursuit.”

A fun fact about Haydn—his love for seasonal produce runs so deep that he has a tattoo of a pattypan squash, symbolizing his dedication to fresh ingredients and creative cooking.

She serves on the South Carolina Restaurant and Lodging Association (SCRLA) State Board and chairs the Greenville County Chapter Board. In her role as Greenville County Board Chair, she helped launch À la Heart GVL in 2025, an organization supporting hospitality employees during personal crises, which earned the ISHA Award of Excellence for Events and Fundraising. She also serves on the Greenville County Tax Accommodations Committee, holds a Certified Tourism Ambassador designation, and volunteers as a Judge for the South Carolina ProStart Invitational, an annual SCRLA Foundation competition that challenges high school students in culinary and restaurant management skills while awarding scholarships to foster the next generation of hospitality leaders. Her leadership and advocacy continue to shape a vibrant, resilient hospitality community that elevates every visitor experience and sets a standard of excellence for the region.

Outside of work, Danielle finds her balance on the trails, whether hiking through the Blue Ridge Mountains or pushing herself with a good trail run. She loves exploring the outdoors with her dog, Atlas, and seeks out new adventures whenever she can. Traveling, discovering unique culinary experiences, and sharing time with friends and family are her favorite ways to recharge, always drawing inspiration from the connections and moments that make life meaningful.

Chad Greenwood

Director of Cycling and Maintenance
A transplant from Syracuse, NY, Chad began his career in bicycle mechanics in Astoria, NY at a local shop while pursuing his passion for the arts. However, it was not until he moved down south, where he had the opportunity to work with some great folks from Greece and Columbia, that he was truly introduced to all things cycling repair

While art has remained a passion of Chad’s, he always fell back into a bike shop to pay the bills. After 5 different shops and 20 years of wrenching, Chad calls himself a “jack of some trades, with much more knowledge on bike repair than an air conditioner.” But do not let his modesty fool you, Chad is known not only as the Hotel Domestique resident Cycling Mechanic, but also the go-to expert for just about anything mechanical within our team.

Her journey into hospitality began at a small boutique hotel in Spain and has since taken her through 14 countries, where she immersed herself in service, culture, and the art of creating unforgettable guest experiences. For nearly three years, she's been proud to be part of the Hotel Domestique team, helping guests feel at home from the moment they arrive.

When she’s not at the hotel, you can find Olivia grabbing coffee with friends, out on a run, planning memorable trips for her travel clients, or exploring new destinations herself. No matter where she is, she’s driven by the same passion: helping people feel cared for and connected.

A true adventurer at heart, Jasmine has lived and traveled across the U.S. and dreams of exploring the world beyond. When she’s not curating unforgettable experiences for clients, you’ll find her sipping Dunkin’ iced coffee, hitting the slopes, white-water rafting, scrapbooking, or embracing cozy fall vibes with a good book and a jar of pickles.

Josh Hamrick

Sous Chef
Josh Hamrick brings passion and precision to his role as Sous Chef at Restaurant 17. He joined the team in June 2023 as a morning cook and quickly demonstrated his talent and leadership, earning a promotion to Sous Chef in March 2024.

His passion for craft cocktails and leadership in mixology culminated in his promotion to Spirits Manager in 2025, where he now oversees the acclaimed cocktail program at Restaurant 17.

Sam’s skills have earned him recognition beyond the restaurant. He competed in the Euphoria Mixology Competition in both 2024 and 2025, taking home the win in 2025. In 2024, he was honored as the Bartender of the Year by the South Carolina Restaurant and Lodging Association, a testament to his creativity and excellence in the field.

While Sam enjoys sipping a classic Old Fashioned, his favorite drink to craft is a Margarita, where he brings precision and flair to every pour. Outside of work, Sam is a devoted husband and an avid adventurer. He spends his free time golfing, white water rafting, and cycling—having completed the Gran Fondo an impressive six times.

Whether he's behind the bar or out
on the trail, Sam brings energy, passion, and a spirit of excellence to everything he does.

Bizmark Poovey

Assistant General Manager

Bizmark wandered onto the property back in June of 2021 and… well, he never left. (We assume he checked himself in and just forgot to check out.)
Since then, he’s fully committed to the Domestique lifestyle. He enjoys whitewater rafting (he insists on riding in the front), ski trips (mostly for the lodge snacks), hiking, camping, and sprinting alongside cyclists like he’s training for the Tour de France.
Bizmark may not have a résumé, but he’s our hardest-working employee unless you count the three-hour naps he takes in between “shifts.”
